Leaves and fruits of Pepper (Piper nigrum). Pepper grows as a vine with the support of other trees or poles. Dense growth occurs if properly nourished and gets enough water and sunlight. The spiciness of pepper is due a compound known as piperine.
Dry pepper is ground into a powder and used in preparations. Pepper powder is used along with salt powder on the table as a flavouring agent.
Black pepper is the processed dry fruit, while green pepper is the unripe fruit which can be processed to retain the colour. White pepper is obtained after removing the black covering of the black pepper seed. Red pepper is the bright red ripe fruit, which can also be preserved in same colour with special processing.
